Does MSG have really high sodium content?

The topic of MSG has a lot of controversy surrounding it, especially in the natural health community. There have been claims that it causes many health complications like asthma, headaches and also brain damage. However, official sources like FDA have always maintained that MSG is quite safe to consume.

While salt is composed of sodium and chlorine ions, Monosodium glutamate (MSG) is a food additive that is derived from a nonessential amino acid called L-glutamate or glutamic acid. This amino acid is abundantly available in nature. MSG is usually added to food to enhance the flavors. It comes in the form of powder and bouillon cubes, which can be added to any kind of food like soups and ramen. While MSG has been bashed by many sources to be harmful for consumption, there is no conclusive scientific evidence backing the same. On the contrary, MSG only contains about one-third the amount of sodium of table salt.

MSG usually comes in the form of a white crystalline powder and resembles table salt. Since it is composed of glutamic acid, it can be broken down more easily in the body because it is not bound by big protein molecules. Its ability to enhance flavors is unlike any other, and it lends rich umami and meaty taste to most foods. It is quite popular in Asian cooking and is also a key constituent in many processed foods in the US. Because of its savory qualities, it can boost the flavor of the dish without the addition of excess amounts of sodium. As a result, it is often considered to be a better alternative to salt. Since higher levels of sodium intake are often connected to high blood pressure, it could prove to be beneficial if MSG is used to substitute salt in the diet.
